Sweet and smoky! This is no ordinary strawberry butter and it is so easy to make with a few strawberries and chipotles in adobo sauce.

This summer I got a bit carried away at Ansems U-Pick and picked far more than I could eat. But I knew I wanted to test some strawberry recipes that were a bit different.

This year the strawberries are so sweet. Strawberry butter is sweet and pretty, but I wanted something with more punch.

Sweet meets smoky with a spark of gentle heat with chipotle and is so good on everything.

Why You Will Love This Spicy Strawberry Butter

This isn’t your usual berry spread. The strawberries keep it bright and fresh, while the chipotle adds a warm, smoky note that sneaks up at the end.

It’s perfect if you like a mix of sweet and savory.

It turns simple toast into something special or gives a fancy touch to everyday dishes. I love seeing the surprise on their faces when the smoky heat sets in.

Why Whipping Makes it Better

Regular butter is fine, but whipped butter feels lighter and spreads so much easier, even when it’s cold.

I whip it long enough to add air but not so much that everything is blended. Unlike other whipped butters I’ve made I don’t whip for a long time.

I like some chunks, and the occasional surprise of a big strawberry or extra smokey bite.

If you want it really light add a tablespoon of milk to the mix.

Plus, it looks pretty and fluffy on the table, which never hurts.

Don’t Skip the Sea Salt!

A little extra salt can help the strawberry flavor pop. Salt doesn’t just make things salty. It balances sweetness and brings out subtle flavors hiding in the background.

So if your butter doesn’t taste strawberry enough, try adding a small pinch more salt and mix it in well. But, if you can’t taste strawberry at all, you should add more mashed or pureed strawberries.

How to Store Strawberry Butter

The tricky thing about whipped butter is that once you put it into the fridge it gets hard and loses the delicious whipped texture.

I keep mine out on the counter for up to 3 days.

You can also keep your strawberry butter in the fridge in a small jar or covered dish. It stays fresh for about a week. You can also freeze it if you want it to last longer.

Wrap it tightly in parchment, then plastic, and it thaws quickly when you’re ready to use it again. It tastes just as good after freezing, which makes it great for making ahead.

What Can I Use Strawberry Butter For?

It’s a fantastic spread on warm toast, scones or biscuits. It’s amazing on waffles or pancakes and adds a sweet, smoky touch to grilled chicken or pork.

You can slather it on corn or stirred it into warm rice for something fun. It’s one of those little things that makes a meal feel special without much effort.

Strawberry Chipotle Whipped Butter Recipe

Butter is expensive so this is a small batch recipe. But if you like it you can easily double or triple.

This recipe is one that you need to play with because the sweetness of your strawberries or the smokiness of your chipotle may be different from mine.

Heat tends to build over time so I don’t like to add too many chipotles as it can overwhelm the berries. But sweetness you’ll know right away. Whip the strawberry butter a bit and if it’s not sweet enough add more honey and whip it again.

And if you want a smoother spicy strawberry butter use pureed strawberries, the adobo sauce instead of the peppers and honey. Mix it together and whip with the butter.

Whipped strawberry sweetness with a touch of smoky chipotle.

Ingredients

  • ½ cup unsalted butter, softened
  • 4 tablespoons finely chopped strawberries or purée
  • 2 teaspoons chipotle in adobo, finely minced
  • 1-2 teaspoons honey
  • 1/4 teaspoon sea salt

Instructions

Let the butter soften until it’s easy to stir. Add the strawberries, chipotle, honey and salt.

Whip everything together with a hand mixer for about one minute and taste and add more chipotle or honey if you like it spicier or sweeter.

Scoop it into a small bowl for serving or shape it into a log using parchment. Keep it chilled or leave it soft for easy spreading.

Notes

Don't Skip the Sea Salt!

A little extra salt can help the strawberry flavor pop. Salt doesn’t just make things salty. It balances sweetness and brings out subtle flavors hiding in the background. So if your butter doesn’t taste strawberry enough, try adding a small pinch more salt and mix it in well.

But, if you can't taste strawberry at all, you should add more mashed or pureed strawberries.
