The Easiest Frozen Pineapple Daiquiri

This tropical pineapple daiquiri is everything you want in a fruity drink that takes less than a minute to make.

One of my highlights to Puerto Viejo was staying at Hotel Banana Azul. If you’re heading to Costa Rica to stay at a gorgeous, but affordable hotel this is it. 

Rease and I arrived at after a 4.5 hour hot and sweaty bus ride to a welcome drink of fresh coconut water served in a coconut.

We quickly forgot the sauna like bus ride.

We had both been disappointed by Costa Rica before and were ready to shake off the bad experience and embrace pura vida.

 

But we decided to take things easy, and head to the beach.

We weren’t in a rush to explore yet and decided we would just relax – as this was supposed to be a vacation. 
 

 
The skies were grey and the waves were high at the beach so we walked back to the hotel and decided to do some “cocktail research”.

I ended up eating some of my favourite Costa Rican food at the hotel – how often does that happen?

Breakfast is included with eggs, Caribbean rice and beans, plantains and homemade banana bread! But we also ate lunch as well. The hot sauce is so good they sell it.

Sadly it was over 100ml and I was traveling carry on only so I couldn’t buy it. I now regret that.

Okay I know I’m getting off topic. Let’s get back to the pineapple daiquiri.

Frozen Pineapple Daiquiri

I started off with the drink of the day, which was a frozen pineapple daiquiri.

Of all the cocktails around the world, I would not say a daiquiri is my favourite. 

But I loved it!

However, this recipe isn’t one of those frozen daiquiris laden with sugar. You do not feel like it’s too sweet to finish.

Instead it’s a really refreshing drink using local tropical fruits that thankfully you can also get at home!
 

If you can’t find passionfruit don’t worry you can easily substitute mango and it will be just as delicious.

How to Make a Pineapple Daiquiri

This is a very easy daiquiri recipe but there are few things that make it easier and more fun.

Jigger

This is a very inexpensive 1oz/2oz jigger, which you’ll find in most bars. It makes pouring cocktails so much easier and doesn’t take up much room.

Kitchen Scale

If you cook on a regular basis you need a kitchen scale. This one isn’t expensive and you’ll wonder why you waited so long to get one.

Cocktail Umbrellas

They always make drinks feel more special, these ones are too cheap to pass up putting in a glass.

What’s in a Pineapple Daiquiri

The daiquiri recipe card below uses the measurements that the bartender at Banana Azul gave me.

But here’s a quick cheat sheet

  • 2 oz white rum
  • 1 oz orange liqueur such as Triple Sec
  • 180g fresh pineapple, if you don’t have a kitchen scale this is about 3/4 cup
  • 2oz passion fruit puree or 4 tablespoons
  • 1 oz fresh lime juice = 2 tablespoons
  • 1 oz of simple syrup = 1 tablespoon + 1 teaspoon

Pineapple Daiquiri Recipe

Simple syrup sounds intimidating but really it’s quite easy…or rather simple. It’s a sugar water syrup.

Over medium-low heat put equal parts of water and white sugar into a saucepan and stir.

Once the sugar has dissolved into the water remove from the heat and let cool. 

Easy peasy!

Frozen pineapple daiquiri

Pineapple Daiquiri

Yield: 1 serving
Prep Time: 5 minutes
Total Time: 5 minutes

This frozen pineapple daiquiri is delicious and not too sweet. Easy to make in less than 5 minutes.

Ingredients

  • 2oz white rum
  • 1 oz Triple Sec
  • 1 oz simple syrup
  • 1 oz fresh lime juice
  • 180g pineapple
  • 2 oz passionfruit puree
  • 2 cups ice

Instructions

  1. Blend pineapple and passionfruit until mixed thoroughly.
  2. Add remaining ingredients and serve immediately.

    I’m feeling this cocktail, girl!! It’s happening this weekend.
    Our first family vacay was in Costa Rica and it was okay but I had nothing to compare it too. Looking back, yeah we ate everything at the hotel…and definitely missed out on some great local food.
    I’ve always thought we should go back, just my husband and I, to enjoy more local food and beverages.
